I'm also convinced after practicing with different recipes and techniques for a while, that biscuits are basically butter and buttermilk held together with just enough flour and pinches of baking powder, soda and salt.

when I try to make biscuits I either get hockey pucks or doughy blobs. and it makes me so sad, because I love biscuits. LOVE them.

It's taken me a lot of practice, t-ra. I think I've adjusted the recipe I was using to my liking. I need to work a little further on technique (folds for flakiness and rise), but I'm very happy with these.
