When filing taxes, what do you normally do if you haven't received a 1099 that you know you're going to get? What do you do once you get it?

I'm reporting the income on my taxes, but TurboTax won't let me eFile without those EINs. I'm planning to just file the taxes through the mail, but I'm not sure if I will still need to amend my return after I get the 1099s (even though I've included the income from them in my return already) or not.

Just got a response from one guy that said "If I don't have to send you one, I won't, but I'm not meeting with my accountant until March 30." Ugh.
